A scene from one of my fanfics I'm working on, this shows the final climactic battle between the Craven Swarm and the Kirin Kaichi as they hold the center of Canterlot to buy time for the allied pony forces to fall back to Canterlot Castle.

Eww, what are those things?! (Cravens, I know).

Please tell me, what kind of creature are they? Are they related to mollusks, worms, fungi, etc. So we know how to kill them.

My only assumption is they're invertebrates (technically no backbones, or any other bones) and almost similar to cephalopods (octopi and squids).

Can they regenerate their missing appendages?

They're more like tentacles/worms. You just have to scatter them as best as you can though they can reform like the Liquid Metal Man from Terminator!

But no, they cannot regen their appendages. Coltrane is a beast ^^

That reminds me of that alien from "Men in Black II" which her whole body at first is a very small worm and covers herself with tentacles when disguising or grow larger.

And this is why having a medieval stasis in a fantasy world is a bad idea - you stick with good-old fashion magic, arrows and sword and you get overran by monster hordes. Start investing in gunpowder already, mares and colts!

Something not even Celestia and Luna know! They threatened Equestria a long time ago... and due to unknown circumstances turned around before wiping out the ponies (in my lore, it was the rise of the Changelings that kept them in check).
